Why does a checken start to smell awfully shortly after it is killed, unless it goes to the fridge?

SOrry for that but why do we have to put the chicken or any other meat in the fridge in order not to start smelling? Why it does not smell when it is alive? (the question is more profound, I'd like an answer from a biollogical point of view). Thanks!
